Salamanders are upside-down grills, usually with the heating elements at the top of the grill which radiate heat downwards. The main advantage of a salamander over a traditional grill is that fat and and oil drips straight onto the catchment tray and not onto the grilling elements. Salamanders can be used to cook food but are typically used to reheat foods or keep them warm while the rest of the order is being cooked. Also great for melting cheese and dishes like parmas. Electric salamanders are also available.
